For trends, we are still seeing cupcake cakes, but not too many. Green is the 'in' color in all shades and also chocolate brown paired with just about anything: red, blue, pink... The style has definitely moved away from the ultra simplicity of just ribbons at the base and a rose or two into more victorian and Lambeth styles. Carved cakes (tilted, tapered, bowed, and waisted) are picking up and usually incorporate lots of shiny elements either the cake itself being pearlized or 'bling on a string' crystals on wires and such.

When my clients see my menu, they seem pleasantly surprised that it's more than just the usual standard flavors, and they often go for a custom flavor, to leave their guests with a lasting memory, not only of the look of the cake, but the taste as well. I am a pastry chef before anything else, which my clients appreciate, because after all, cake is meant to be eaten! Color is also more acceptable, and it seems that MOST brides want color in their design, which I find so refreshing. This trend will continue, and brides will be more adventurous with color.
